Healthy Recipe Roundup!

My new years resolutions are never to eat more healthy....hit the gym more...lose 10 pounds. I should already be doing all these things everyday, it's should be part of my everyday lifestyle! So, I thought I would share some of my FAVORITE health conscious recipes that I have been trying and loving over the past few months, for those of you that are thinking of making changes to your life style this year! All these recipes are a healthy variation of foods that traditionally are not low in calories such as Mac and Cheese, Lasagna, Pizza and so on! Food I LOVE but feel so guilty indulging in! A lot of my favorites can be found on Skinny Taste, a website I have grown to LOVE and obsessively check weekly for amazing ideas! Enjoy!*

Kale and Mushroom Lasagna Rolls

 

Ingredients:
10 lasagna noodles, cooked
2 /12 cups marinara sauce
2 eggs, beaten
5 cups of kale, stems removed, finely chopped
8 oz mushrooms, finely chopped
½ white onion, finely chopped
1 clove crushed garlic
1 container of low fat ricotta cheese
3 oz partly-skimmed mozzarella cheese (grated)
2 tsp olive oil
salt and pepper
Directions:
Preheat oven to 350°. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

In a large saucepan, heat oil over medium heat. Add garlic and onions sauté until golden, about a minute. Add kale, salt and pepper and sauté about 5 minutes. Add mushrooms to the pan, cook until soft. Add Salt and pepper to taste.

Combine cooked kale, mushrooms, ricotta, Parmesan cheese, egg, salt and pepper in a medium bowl.
Take 1/3 cup of mushroom kale mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
Ladle 1 cup of sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, until cheese melts.

10 • Serving Size: 1 roll • Calories: 258.5 • Fat: 8.4 g • Fiber: 3 g • Protein: 11.5 g • Carbs: 30.5 • Sugar: 2 g Sodium: 208 g
 
Spaghetti Squash Lasagna Bake
 
 
 

Ingredients:

2 small spaghetti squash
2 tsp olive oil
½ white onion, chopped
1 clove crushed garlic
1 pound of lean ground meat (turkey, chicken, beef)
3 oz partly-skimmed mozzarella cheese
1 jar of marinara sauce
 salt and pepper

Directions:

Preheat oven to 400ºF. Cut spaghetti squash in half lengthwise and scoop out seeds. Season lightly with olive oil, salt and black pepper; bake about 1 hour flesh side down, or longer if needed on a baking sheet.Once cooked, use a fork to scrape the strands out into a bowl, salt and pepper to taste.
Place empty squash shells to the side.
In a medium sauce pan heat the oil over medium-low heat. Add the onions and garlic cook for about a minute. Add the lean ground meat of your choice, salt and pepper to season. Once the meat is fully cooked add the marinara sauce to the pan and simmer on low for about 10 – 15 minutes.
Re-fill the squash shells with the cooked spaghetti squash, ladle about a cup of your meat and sauce mixture onto the spaghetti squash, top with cheese and bake uncovered for 15 – 20 minutes, or once everything is heated through and the cheese in melted.

Servings: 4 • Size: 1 boat • Calories: 246 • Fat: 13 g • Protein: 17 g • Carb: 17 g • Fiber: 2 g • Sugar: 7 g Sodium: 701 mg • Cholesterol: 71 mg

 
 
Spinach Parmesan Quinoa Bites
 
 

 

Ingredients:
 
1 small bag of frozen spinach (de-frost according to package)
1/2 white onion, chopped
1 clove of crushed garlic
1/4 cup of grated parmesan cheese
1 cup un-cooked quinoa (rinsed)
2 eggs, beaten
cooking spray
salt and pepper
 
Directions:
 
Preheat oven to 375 degrees.

 

Cook the rinsed quinoa in 2 cups of water, once boiling let simmer on medium-low heat until all the water is absorbed. Set aside and let cool.
 
Combine the spinach, cheese, garlic, onion and cooled quinoa in a medium sized mixing bowl, season to taste. Add the beaten eggs and mix.
 
Spray a non-stick mini muffin tin with cooking spray and fill with spinach and quinoa mixture, bake for 15-20 minutes or until slightly crispy on the top. Set aside and let cool.
 
Recipe makes approx. 15 bites!
 
Serving size 4 Bites Calories •  206.6 Fat 13.8 g  Carbs •  15.2 g Protein •  7.1 g

hello 2014!

Now that the total craziness of the holidays is over I think I can now try to focus on blogging more frequently! The holidays are such a crazy time for EVERYONE! Your eating, drinking and driving {not at the same time} all over the place to see people you love and miss! I hope everyone had an amazing and {hopefully} relaxing  holiday and that Santa was good to you! I had a solid 9 days off from work which was amazing! I didn't feel like I had to rush rush rush and I could take my time getting places and wrapping presents! It was nice to be able to spend the holiday's back in Ontario for the first time in 2 years! I missed getting together with my girlies and maybe having a bit too much wine...or waking up on Christmas Morning in my parents house.... so weird! Here are some snap shots of the past few weeks! I'm planning on doing a holiday gift round up a bit later! Happy 2014! Here's to new beginnings and happy changes!*

weekend snaps

Friday night was pretty chill. We made homemade pizza which was the BEST yet, no photos because we ate it that quickly, drank wine and I fell asleep at 10pm {lame}! The city was JAMMED with things happening! I have never been to the Royal Winter Fair, so on Saturday we decided to venture over to the exhibition grounds....and brave our farm animal allergies to take in some farming culture! We ate a lot of samples, drank a lot of wine and learned how to judge cows...educational! Saturday night we went out for a late dinner then went to see Gravity at the IMAX. If you're in the mood for a stressful nail bitter of a movie...go see Gravity! The special effects are amazing, Sandra and George are great and the movie is S.T.R.E.S.S! Sunday, was pretty relaxing the sun finally decided to make an appearance and we took Effy to a dog park and drank some delicious coffee! Then we decided to make homemade chicken tenders {baked NOT fried!} {recipe based off Rachel Ray here} and a roasted beet and goat cheese salad {recipe based from here}. It was a delicious team effort!*

Recipe Roundup!

I know I posted last week {here} about some amazing Quinoa Bites I tried from Pinterest {follow me here}, but this past weekend I was craving something sweet! Instead of caving and heading to Tim Horton's or Starbucks to satisfy my cravings instantly, I took to Pinterest yet again to find something healthier {I am heading to VEGAS on Thursday you know}! My boyfriend LOVES anything with peanut butter and chocolate so I went on a hunt and found these AMAZINGLY addictive Chocolate Chip Peanut Butter Quinoa Cookies {click for link}! The great thing about this recipe is there is no extra sugar, dairy or oils added resulting in a lower calorie dessert! Trust me you will NOT be able to eat just one!*



Ingredients:

2 cups cooked Qunioa
1/2 cup all natural peanut butter
3 tablespoons pure Maple Syrup {I substitute with honey}
1/4 teaspoon sea salt
3/4 cup rolled oats
1/2 cup unsweetened coconut
1/2 cup semi-sweet chocolate chips

Directions:

1. Preheat oven to 350 degrees
2. Combine Quinoa, peanut butter, maple syrup {or honey}, salt and oats in a mixing bowl. Mix until ingredients are well combined.
3. Stir in coconut and chocolate chips
4. Line baking sheets with parchment - paper
5. Scoop and mold dough into round tablespoon sized cookies
6. Bake for approximately 20 minutes or until bottoms are nicely browned
7. Allow to cool and firm up before eating and storing

Nutrition:
1 cookie = 1 serving

Calories: 80
Fat: 4 grams
Carbs: 9 grams
Protein: 2 grams

Recipe Roundup!

I think it's fair to say that I'm obsessed with Pinterest {follow me here}, and I am one to attempt most of what I pin especially the recipes! Since I started hitting the gym harder then usual to get "Vegas Ready" I have been looking for quick and easy healthy meal ideas to switch up my everyday fish and steamed veggies {because lets be honest that gets boring quickly!}. This past weekend I found two delicious Quinoa recipe ideas, Apple Cinnamon Quinoa Bites and Quinoa Pizza Bites! The great thing about Quinoa is it's considered a grain and is closely related to beets and spinach which makes sense as to why it's packed with tons protein! Quinoa is a much healthier alternative to rice, pasta and even couscous. Below are the recipes and nutrition information for the bites I made this past weekend! {photos are not my own and are via Pinterest}!*

Apple Cinnamon Quinoa Bites

Ingredients:

1 Cup - cooked Quinoa
1 Cup - Quick Oats
1/2 teaspoon - cinnamon
1/2 teaspoon - nutmeg
3 tablespoons - brown sugar
1 tablespoon - granulated sugar
1 tablespoon - maple syrup {I substituted honey}
1 Cup - chopped apples
2 eggs, lightly beaten


Directions:

1. Preheat oven to 350 degrees
2. In a large mixing bow, add cooked quinoa and quick oats (allow quinoa to cool first). In a seperate mixing bowl combine cinnamon, nutmeg and sugars - add spice mixture to the qunioa and quick oats. Add maple syrup (or honey), apples and eggs until mix is combined
3. Spray your muffin pan (minis work best) with non-stick cooking spray.
4. Fill each muffin slot with 1 tablespoon of the mixture and bake for 15 - 20 minutes
5. Let cool and enjoy!

Nutrition:
Per Bite (recipe yields about 26, tablespoon sized bites)

Calories - 38
Fat - 0.7 grams
Protein - 1.2 grams
Fiber - 0.6 grams
Carbs - 6.25 grams


Quinoa Pizza Bites

Ingredients:

1/2 - 1 Cup - cooked Quinoa
1 large egg and 1 egg yolk
1/2 Cup - chopped onion (small)
1/2 Cup - Fat Free shredded mozzarella cheese
1 tablespoon - minced garlic
1 tablespoon - dried basil
1 tablespoon - dried oregano
Pinch of Salt 
Pizza sauce for dipping

Directions :

1. Preheat oven to 350 degrees
2. Combine all ingredients {except the pizza sauce} into a large mixing bowl until well mixed
3. Lightly spray the bottom of a mini-muffin tin with non-stick cooking spray.
4. Fill each muffin slot with 1 tablespoon of mixture and bake for 15 - 20 minutes
5. Serve warm with pizza sauce to dip!

Nutrition:

Per 12 Bites (recipe yields about 26, tablespoon sized bites)

Calories - 265
Fat - 6 grams
Protein - 18 grams
Carbs - 33 grams

Christmas in the Rockies

As I mentioned in older posts, we couldn't afford to fly home for Christmas this year, so we decided to start  new traditions! Christmas Eve dinner and Christmas Day in the mountains! This might have possibly been one of the best Christmas's I've ever had! There's nothing more Chrismas like driving into Banff National Park and being greeted by a snow storm,  moose and deer all around us and a beautiful chalet with a wood burning fireplace!
